Equipment Needed
- 10-inch cast-iron or oven-safe skillet
- Wooden spoon or spatula
- Two mixing bowls (one large, one medium)
- Whisk
- Measuring cups and spoons
Step-by-Step Instructions
First, I preheat my oven to 400°F (200°C). I place my cast-iron skillet over medium-high heat and add the ground beef and diced onion. I break up the beef with my wooden spoon as it cooks. The sound and smell are pure weeknight comfort. When the beef is no longer pink and the onions are soft, I drain any excess grease. This step is crucial for a pie that isn’t soggy. Then, I stir in the minced garlic, Worcestershire sauce, dried mustard, salt, and pepper, letting it cook for just another minute until fragrant.
I spread the seasoned beef mixture evenly across the bottom of the hot skillet. Then, I take my shredded cheddar cheese and sprinkle it generously and evenly over the entire surface of the beef. This creates a molten, cheesy layer that the batter will nestle into. I remove the skillet from the heat while I make the batter. The residual warmth will start to melt that cheese beautifully.(See the next page below to continue…)
